Sevruga (acipenser stellatus) is a true delicacy. We bring you the freshest Sevruga available for consumption in the United States, straight from our partner Sturgeon AquaFarms in Bascom, FL. It is a medium length sturgeon that is native to the Caspian Sea and its river basins. Fresh Sevruga meat is boneless, white, firm and at the same time tender. It has the lowest percentage fat among all sturgeons. It is similar in texture to tuna and makes for a perfect fish entrée – fried, smoked, baked, grilled or BBQ’ed.
